GEOLOGY: The ideal terroir for Savagnin, these grey and blue marl soils from the LIAS (Early Jurassic) feature a laminated structure typical of the era, fostering the grape variety's optimal expression.

WINEMAKING: The grapes are gently pressed at 1.5 bar. The must is then clarified through a 24-hour settling process (débourbage), preparing the wine for its alcoholic and malolactic fermentations.
AGING: At Domaine Bourdy, Savagnin from Côtes du Jura is essentially a Vin Jaune whose aging is halted before the 7-year mark. Aging therefore varies between 2 and 5 years. Laura Bourdy stopped the 2022 vintage after 2.5 years of aging (current vintage), but previous Vin Jaune vintages still in barrel can be bottled at any time.
