GEOLOGY: grey clays and blue-grey marls from the LIAS (Lower Jurassic); the Chardonnay vines here produce wines with beautiful acidity and rich flavors.

YIELD: 44 hl/ha.
SORTING: in the vineyard and at the winery.
WINEMAKING: the grapes are pressed at 1.5 bar and the juice is left to settle (settling) for 24 hours. The Bourdy estate works with indigenous yeasts. Fermentation lasts approximately between 12 and 15 days. The full identity of this Côte-du-Jura is born during the aging and blending process before bottling.
AGING: generally 3 to 4 years. The must is aged in oak barrels with topping up (ouillage) for the first 12 months. Then, aging continues without topping up (non-ouillé), in oxidative mode, but without the development of the "voile" (yeast flor) which forms more with difficulty with Chardonnay.
BOTTLING: after light filtration, and as sales progress. This batch was bottled in July 2025.
