Terroir

PLANTING DATE: 1954, 1958 and 1960.

LOCATION: blend of 2 plots Les Châtaigniers and Les Carrés du Midi located in Mardeuil, the village where Charles Fouquet and his family originate.

EXPOSURE: N/A

SOILS: CAMPANIAN chalk, creating light-textured carbonate soils. Wines from this sector have long been renowned.

Viticulture & Winemaking

HARVEST: hand-picked.

YIELDS: N/A

SORTING: in the vineyard and in the cellar.

WINEMAKING: 'Cuvée' must (must exclusively from the first 3 presses).
After pressing, alcoholic fermentation takes place in stainless steel tanks (87%) and in 400-liter oak barrels for the remaining 13%. Malolactic fermentation is not carried out. Aging on fine lees for 7 months before racking for 'prise de mousse'.

RACKING DATE: May 2021.

AGING 'SUR LATTES': 30 months.

CORK: natural cork.
