Viticulture & Winemaking

SORTING: in the cellar.

WINEMAKING: vinification in temperature-controlled stainless steel tanks with a small portion of the Pinot Noir vinified in 10hl dolium (amphorae). For alcoholic fermentation, Nathalie Falmet uses neutral fermenting yeasts.. Malolactic fermentation is carried out. Racking followed by cold tartaric stabilization.

RACKING DATE: March 2019.
