Terroir

PLANTING DATE: 1930.

LOCATION: single-vineyard plot from the Aux Avoines location. "Auvonnes" means "Oats" in the local dialect, as the plot was historically dedicated to oat cultivation.

EXPOSURE: East. 250 meters above sea level.

SOILS: alluvial fan gravel soil dating from the QUATERNARY.

Viticulture & Winemaking

HARVEST: hand-picked.

YIELDS: N/A.

SORTING: in the cellar.

WINEMAKING: direct pressing in a vertical press for 5 to 7 hours. Alcoholic and malolactic fermentations in old oak barrels and demi-muids. Indigenous yeasts.

AGING: 12 months on fine lees.

BOTTLING: no fining, just a light filtration for microbiological stabilization purposes.

CORK: natural cork.
