WINEMAKING: Upon arrival at the winery, the grapes are cooled before being direct-pressed. The must is transferred to stainless steel vats. Alcoholic fermentation begins for a few days before being interrupted by fortification (mutage - addition of 96% neutral spirit) to kill the yeast.
AGING: After racking, short aging in vats.
BOTTLING: After light filtration.
CLOSURE: Natural cork.
