WINEMAKING: Upon arrival, the grapes undergo pre-fermentation cooling followed by direct pressing. The must is then transferred into stainless steel tanks to initiate alcoholic fermentation. After several days, the process is interrupted by fortification (mutage) with the addition of neutral wine spirit (96% abv); this neutralizes yeast activity to stabilize the must's natural residual sugars.
