Terroir

PLANTING DATE: 1993 (massal selection).

LOCATION: Plot En Spois.

EXPOSURE: N/A.

SOILS: marls from the TRIASSIC (Jurassic geological formation), composed of Rhaetian laminated black marls on the upper slope and Keuper iridescent marls on the lower slope.
The high water-retention capacity of these marls is a precious asset in summer for the vines, providing a vital water resource.

Viticulture & Winemaking

HARVEST: hand-picked.

YIELDS: N/A.

SORTING: in the vineyard and in the cellar.

WINEMAKING: gentle pneumatic pressing. Alcoholic fermentation with indigenous yeasts followed by malolactic fermentation.

AGING: under veil for 6 years in 228L oak barrels.

BOTTLING: light filtration before bottling.

CORK: natural cork.
