LOCATION: Plot La Mailloche. A large double-headed hard wooden mallet used by lumberjacks, the "mailloche" evokes the typicity of the terrain in this locationv, which becomes "hard as a mallet head" in summer...

EXPOSURE: N/A.

SOILS: thick layer (approx. 10 meters) of silt and decalcification clays resting on a bedrock of Gryphaea limestone (name of the fossilized oyster found in the rock) dating from the LIAS (Jurassic geological formation).

Viticulture & Winemaking

HARVEST: hand-picked.

SORTING: in the vineyard and in the cellar.

WINEMAKING: gentle pneumatic pressing. Spontaneous alcoholic fermentation with indigenous yeasts followed by malolactic fermentation.
