LOCATION: Classified Grand Cru locality Florimont. Dating back to medieval times, the name "blooming mountain" evokes the month of March when the hill was adorned with a floral carpet. Geographically remarkable, this promontory is an outlier hill preserved during the collapse of the Rhine Rift Valley, resting on a sedimentary stack of invaluable worth.
EXPOSURE: East. Gently sloping, between 225 and 290 meters above sea level.
TERROIR: Marl-limestone soil. Topsoil composed of limestone scree embedded in marl (which promotes water infiltration and forces the vines to root deeply), resting on a deep clay-limestone base dating from the BAJOCIAN (Middle Jurassic) and MUSCHELKALK (Middle Triassic) periods.
On this terroir, Pinot Gris yields a voluptuous, racy wine endowed with great finesse.
HARVEST: Hand-harvested.
SORTING: At the winery.
VINIFICATION: Immediate pressing of whole bunches in large oak casks (foudres) for alcoholic and malolactic fermentations (indigenous yeasts) as well as aging.
AGING: 14 months in large oak casks (foudres).
BOTTLING: After filtration through diatomaceous earth and sheet filter.
CLOSURE: Natural cork.
"On this limestone terroir, the Pinot Gris retains remarkable freshness. The 2019 vintage proves that this grape variety is capable of producing a voluptuous and racy wine: displaying a luminous robe with amber highlights, its predominantly floral and spiced nose unveils aromas of hawthorn, peach, and apricot, all enhanced by a touch of lychee and white pepper. On the palate, the body is supple, round, and warm, perfectly balanced by a lovely acidity that makes it delightfully approachable and digest. A magnificent white wine crafted for fine dining, ideally paired with rich-textured dishes such as poultry in cream sauce, foie gras, or spiced Asian cuisine."
