LOCATION: the plot called Bois Long, located at an altitude of 350 metres in the Dentelles de Montmirail mountain range. The vines grow surrounded by wild thyme, rosemary, everlasting flower (immortelle), and olive trees.
EXPOSURE: South.
TERROIR : the vineyard is rooted in black shale formations and slaty marls dating from the TRIASSIC period. These arid and intensely stony soils force the root system to burrow deep into the rock fractures in search of moisture. This natural water stress drastically limits the yields: the vine produces only a few clusters of highly concentrated, very small berries.
HARVEST: manual, on September 29th, 2021.
YIELD: 15-20 hl/ha.
SORTING: in the vineyard and at the cellar.
WINEMAKING:
AGEING: 12 months in enamelled vats + 12 months in bottles.
BOTTLING: after light filtration.
CORK: DIAM®10 cork, specifically designed to ensure the absence of any cork taint, using cork flowers previously cleared of the molecules responsible for this aromatic deviation.
