AGE OF VINES: 50 years.
LOCATION: the "lieu-dit" Les Gippières, situated at an altitude of 350 metres.
EXPOSURE: South. This exposure ensures solar and generous ripeness, balanced by the nightly freshness of the site. This prevent the "jammy" character sometimes found in low-lying Syrahs.
TERROIR : soil dating from the OLIGOCENE and composed of limestone conglomerates mixed with clay and fine sand. These are light, well-draining soils that promote the finesse of the tannins.
HARVEST: manual.
YIELD: 15-20 hl/ha.
SORTING: in the vineyard and at the cellar.
WINEMAKING: 50% whole clusters are kept. Only the ripest stems are selected. They are added to the grapes in concrete vats for a 17-day maceration. The must is then pressed and racked into stainless steel vats for ageing. Both alcoholic and malolactic fermentations are completed.
AGEING: 12 months in stainless steel vats + 12 months in bottle.
BOTTLING: after light filtration.
CORK: DIAM®10 cork, specifically designed to ensure the absence of any cork taint, using cork flowers previously cleared of the molecules responsible for this aromatic deviation.
