Terroir

AGE OF VINES: century-old.

LOCATION: a blend of the highest plots on the estate, reaching altitudes of 400 to 450 metres.

EXPOSURE: North / North-West. This exposure is deliberately chosen to maintain cool temperatures and allow the grapes to ripen very slowly, developing aromatic complexity without the risk of over-ripeness.

TERROIR : formations of black schist and slaty marls dating back to the TRIASSIC period. These poor, rocky soils force the roots to dive deep into the rock fissures to find water. The vines produce only a few clusters per vine with very small, very dark berries. The name of the cuvée, "Pierre Noire" (Black Stone), refers to the dark colour of the slaty marls on which the vines are planted.

Viticulture & Winemaking

HARVEST: manual.

YIELD: 10 hl/ha.

SORTING: in the vineyard and at the cellar.

WINEMAKING: 10% destemming. The stems are meticulously sorted to keep only the ripest. They are added to the grapes in the tank for a 15-day maceration in concrete vats. Both alcoholic and malolactic fermentations are completed. The juice is then pressed and racked into concrete, stainless steel, and enamelled vats for ageing.

AGEING: 18 months in concrete, stainless steel, and enamelled vats.

BOTTLING: after light filtration.

CORK: DIAM®5 cork, specifically designed to ensure the absence of any cork taint, using cork flowers previously cleared of the molecules responsible for this aromatic deviation.

"Pierre Noire charms us with its perfect balance and its fleshy, savoury texture. It is a true juice of black cherry and blackcurrant, with a subtle touch of laurel and a slightly liquorice-scented finish. It is simply magnificent, and it must, of course, be decanted an hour before tasting so that it can express its full potential!"
