Terroir

AGE OF VINES: 53 years.

LOCATION: a blend of high-altitude plots (300-400 metres) on the foothills of Mont Ventoux. Combined with the plots' orientation, the altitude allows for full phenolic ripeness while preserving a beautiful natural acidity. The vines are planted amidst tall grasses and wild plants such as wild thyme.

EXPOSURE: mainly North-West. This orientation protects the vines from the intense heat of the afternoon summer sun.

TERROIR : soils primarily composed of very dense red and blue clays dating from the STAMPIAN (Oligocene) period, intermingled with Triassic limestone fragments from the bedrock. The clays act like a sponge, storing spring rainwater to slowly release it to the vines during summer. This provides the wine with its fleshy structure and velvety character.

Viticulture & Winemaking

HARVEST: manual.

YIELD: 15 hl/ha.

SORTING: in the vineyard and at the cellar.

WINEMAKING: 75% destemming. The remaining 25% of stems are carefully sorted, and only the ripest are kept. They are added to the grapes in fermentation vats for 10 days. The must is then pressed and continues fermentation in concrete vats.

AGEING: 18 months in concrete, stainless steel, and enamelled vats.

BOTTLING: after light filtration.

CORK: DIAM®5 cork, specifically designed to ensure the absence of any cork taint (TCA), using cork flowers previously cleared of the molecules responsible for aromatic deviations.

"Oh, what a beautiful wine! Its complexity and aromatic richness make it a true gastronomic wine for lovers of deep, dense terroir-driven wines. Black cherry, blackcurrant, laurel, and mentholated thyme intertwine in the glass. Excellent 'mâche' (chewiness) on the palate with silky tannins—simply magnificent. Consider decanting for an hour before serving; it truly deserves it! "
