GEOLOGY: The "Le Croc de la Terre" cuvée draws its youth and crunchy fruitiness from the meeting of two distinct terroirs: on one hand, the Terres Blanches, composed of clayey Kimmeridgian marls whose coolness promotes a slow and aromatic ripening; on the other hand, the Chailloux, flint-rich soils high in silica that store heat to offer the grapes a sunny and early maturity.
HARVEST: manual.
YIELD: 55 hl/ha.
SORTING: in the vineyard and at the winery.
WINEMAKING: cold pre-fermentation maceration. Fermentation with indigenous yeasts for 15 days with pump-overs (remontage). Pressing using a traditional manual wooden press.
AGING: for 12 months: the first 6 months in 10-year-old 500-liter oak barrels, and the following 6 months in vats.
BOTTLING: no fining. No filtration.
CLOSURE: natural cork.
