GEOLOGY: The Sancerre vineyard owes its complexity to the interplay of the Sancerre and Thauvenay geological faults, which have exposed ancient terroirs. The "Le Rome Antique" cuvée is part of this history through its plots in Sainte-Gemme-en-Sancerrois. Here, the wine draws its strength from the "Terres Blanches": an 80-meter foundation of Upper Kimmeridgian marls where clay and shelly limestone alternate. These high-altitude "cold" soils impose a slow ripening on the grapes, ensuring great aromatic finesse.
HARVEST: mechanical & manual.
YIELD: 20 hl/ha.
SORTING: in the vineyard and at the winery.
WINEMAKING: cold pre-fermentation maceration for 1 week, followed by a 15-day maceration with fermentation. Indigenous yeasts.
AGING: 24 months: 12 months in 1 to 3-year-old oak barrels, followed by 12 months in bottle.
BOTTLING: after light filtration.
CLOSURE: natural cork.
