GEOLOGY: Our Sancerre Red is a pure expression of the "Terres Blanches" (white lands) of Sainte-Gemme-en-Sancerrois. From a vineyard shaped by the major geological faults of Sancerre and Thauvenay, this wine draws its identity from alternating clayey marls and soft KIMMERIDGIAN limestone. This specific terroir, recognized as "cold" due to its altitude and clay density, allows for a progressive ripening of the berries. The result? A balanced red wine, driven by mineral freshness and an elegant structure.
HARVEST: mechanical.
YIELD: 55 hl/ha.
SORTING: in the vineyard and at the winery.
WINEMAKING: cold pre-fermentation maceration, followed by a 15-day skin-on maceration with fermentation. Indigenous yeasts.
