GEOLOGY: The terroir consists of "terres blanches" (white lands) soil, made up of a thick 80-meter layer of more or less clayey UPPER KIMMERIDGIAN marls, alternating with beds of soft or shelly limestone.
These compact soils, with a high clay content and generally located at higher altitudes, are considered "cold" soils. They are conducive to a slow and progressive ripening of the grapes.
HARVEST: mechanical.
YIELD: 20 hl/ha.
SORTING: in the vineyard and at the winery.
WINEMAKING: gentle pressing. Fermentation in temperature-controlled stainless steel vats using indigenous or selected yeasts.
AGING: for 12 months in oak barrels + 6 months in bottles.
BOTTLING: after light filtration.
CLOSURE: natural cork.
