LOCATION: The CAP DE CREUS cuvée is a red Rancio Sec made from a Solera, or 'perpetual reserve', with its first vintage dating back to 1968. The principle of the Solera is to replenish a large oak cask (foudre) as it is emptied: each year, the portion drawn off is replaced with old wine that has undergone oxidative aging. The very first vintage poured into this perpetual barrel dates back to 1968.

TERROIR : The Côte Vermeille vineyard is arranged in terraces, requiring exclusively manual labor and therefore highly sustainable practices that minimize vineyard intervention. Low rainfall, abundant sunshine, and the Tramontane wind are major regional assets, yielding grapes of flawless sanitary quality without the use of synthetic chemicals.

Viticulture & Winemaking

HARVEST: Manual, using slightly overripe grapes.

YIELD: 35 to 40 hl/ha.

SORTING: In the vineyard and at the winery.

WINEMAKING: Full destemming, followed by vatting and fermentations carried out to completion, until absolutely no residual sugar remains. This explains the high alcohol content.

AGING: Oxidative aging in barrels for many years before being racked into a half-full large oak cask (Solera or perpetual reserve), replacing the portion drawn off during the year for bottling.

BOTTLING: N/A.

Sommelier's Note

"Rancios are becoming rare. CAP DE CREUS is an 'hors d'âge' wine, amber in color, featuring aromas of walnut, raisin, candied fruits, and prune. Unlike Banyuls, which are fortified, this wine undergoes oxidative aging in a solera, similar to the Vin Jaune from Jura, but without the development of a flor. Fewer and fewer estates maintain this tradition, which is a shame, as it is a magnificent wine.To drink cold."
