  • Les Greneriers & Les Caves, which produce very well-structured wines.

  • Les Burdelines, Les Pérelles & Champs de Cours.

  • Les Brussellions, which yields more supple and lighter wines than the aforementioned plots.

EXPOSURE: N/A.

GEOLOGY : Predominantly a "primitive" granitic bedrock formed during the PALEOZOIC ERA, from -600 to -200 million years ago. This is an igneous rock resulting from the crystallization of unexpelled lava that cooled within the volcanic chamber.

  • Les Greneriers & Les Caves: Weathered granitic bedrock.

  • Les BurdelinesLes Pérelles & Champs de Cours: Soil more or less rich in red clays, silts, and sands covering the primary granitic bedrock.

  • Les Brussellions: Fluvial alluvial soil from the QUATERNARY period composed of sands, gravel, and pebbles.

Viticulture & Winemaking

HARVEST: Manual.

YIELD: 16 hl/ha.

SORTING: In the vineyard and at the winery.

WINEMAKING: 80% de-stemming of the clusters, followed by a semi-carbonic maceration for 12 to 15 days with daily pump-overs. Alcoholic fermentation followed by pressing of the must and racking into concrete vats for aging.

AGING: 16 months in concrete vats.

BOTTLING: After blending the various vats and light filtration. No fining.

CORK: Natural cork.

Sommelier's Note

"This is a beautiful Moulin-à-Vent, just as I like them: racy, fleshy, and dense. Its generosity of black fruits, along with chocolatey and peppery notes, make it a Gamay that is already ready to drink and built to gain complexity over time. Don't hesitate to decant it 1 hour before tasting. A huge favorite!"
