GEOLOGY : Predominantly a "primitive" granitic bedrock formed during the PALEOZOIC ERA, from -600 to -200 million years ago. This is an igneous rock resulting from the crystallization of unexpelled lava that cooled within the volcanic chamber.
HARVEST: Manual.
YIELD: 16 hl/ha.
SORTING: In the vineyard and at the winery.
WINEMAKING: 80% de-stemming of the clusters, followed by a semi-carbonic maceration for 12 to 15 days with daily pump-overs. Alcoholic fermentation followed by pressing of the must and racking into concrete vats for aging.
AGING: 16 months in concrete vats.
BOTTLING: After blending the various vats and light filtration. No fining.
CORK: Natural cork.
