LOCATION: AU QUIN CHÂTEAU is another great Chardonnay from the estate, but with a radically different profile compared to the ARAGONITE cuvée.
The grapes come from the lieu-dit 'Au Quin Château"', located in the neighboring commune of Martailly-lès-Brancion, just north of Cruzille. It is a very steep terroir, well-ventilated by the north wind—a key asset for warm vintages.
EXPOSURE: Due west. This exposure provides plenty of warmth and energy to the grapes, which is beautifully balanced by the cool north wind, allowing the wine to develop a fleshy texture while maintaining a vibrant tension.
TERROIR : The fault system surrounding the "lieu-dit" Au Quin Château blends blue marls from the LOWER OXFORDIEN period (bringing freshness, moisture, and the flinty notes typical of the Jura) with white marls and limestones from the ARGOVIAN period (bringing body and a silky texture to the wine).
HARVEST: manual.
YIELD: 25 to 35 hl/ha.
SORTING: in the vineyard and at the cellar.
WINEMAKING: the grapes undergo a slow and gentle pressing lasting 4 to 6 hours. The resulting juice is then left to rest in the vat for a cold-settling (débourbage) operation that takes 6 to 18 hours depending on requirements. It is then racked into vats for alcoholic and malolactic fermentations using indigenous yeasts.
AGEING: 12 months on fine lees in vats.
BOTTLING: after light filtration.

NOTE: The AU QUIN CHÂTEAU cuvée is a zero-sulfite wine. It may therefore show a slight cloudiness in the glass. It should not be exposed to heat and must be kept in a cool cellar.
