Terroir

AGE OF VINES: 50-80 years.

LOCATION: ARAGONITE is one of the estate's two flagship cuvées. Perfectly balanced, it delivers a rare energy. The grapes come from the plot called "Le Clos des Vignes du Maynes", a historical vineyard cultivated by the monks of Cluny as early as the year 910.

EXPOSURE: East / South-East.

TERROIR : soil dating from the UPPER BATHONIAN (Middle Jurassic). The outcropping substrate here is known as "dalle nacrée" (pearly slab), a fossiliferous sedimentary limestone containing numerous shell fragments that give it iridescent reflections, hence the term "pearly". However, this specific corner of the Clos des Vignes du Maynes features a rare geological anomaly: the soil is packed with a very pure resurgence of active limestone crystallized into pure aragonite, whose high local concentration gives the wine a tense, sharp, and saline profile.

Viticulture & Winemaking

HARVEST: manual.

YIELD: 35 hl/ha.

SORTING: in the vineyard and at the cellar.

WINEMAKING: the grapes undergo a slow and gentle pressing lasting 4 to 6 hours. The resulting juice is then left to rest in the vat for a cold-settling (débourbage) operation that takes 6 to 18 hours depending on requirements. It is then racked into 600-litre demi-muids for alcoholic and malolactic fermentations using indigenous yeasts.

AGEING: 10 months on fine lees in demi-muids.

BOTTLING: after light sulfiting.

CORK: natural cork.

NOTE: As the ARAGONITE cuvée is vinified with very low sulfites and bottled without filtration, it may show a slight cloudiness in the glass. It should not be exposed to heat and must be kept in a cool cellar.

" ARAGONITE is a so-called "natural" wine, so do not be surprised to see a slight cloudiness in the glass. The nose is intense with creamy notes, scents of white flowers, citrus fruits, and green apple. The palate is fresh, toning, and mouth-watering. A generous and savory vintage for natural wine lovers! "
