Terroir

YEAR VINES PLANTED: 2011.

LOCATION: vines planted in the "lieu-dit" Clos Fourneau: situated high up on the hillside, this plot, surrounded by walls and boxwood, is ploughed entirely by horse. It still features its fully restored "cadole": an old round stone hut built by winemakers to shelter from bad weather or to have their lunch.

EXPOSURE: South / South-East. Provides excellent sunlight.

TERROIR: the soil is composed of encrinitic limestone (containing fossil fragments of small marine organisms from the JURASSIC period called crinoids) mixed with fairly light decalcified clays, resting on a subsoil of hard limestone slabs dating from the BATHONIAN period.

Viticulture & Winemaking

HARVEST: manual.

YIELD: N/A.

SORTING: in the vineyard and at the cellar.

WINEMAKING: immediate pressing, followed by cold settling (débourbage) of the coarsest lees. Racking into vats, alcoholic fermentation with indigenous yeasts. Malolactic fermentation completed.

AGEING: 18 months on fine lees in vats.

BOTTLING: no fining or filtration. Light sulfiting before bottling.

CORK: natural cork

Sommelier's Note

"The sunny exposure gives this Chardonnay succulent aromas of vine peach and pink grapefruit, enhanced by a few creamy notes from the lees ageing. The limestone soil provides it with an elegant and toning texture, stretching into a finish with hints of fresh almonds. A truly beautiful vintage!"
