Terroir

VINE AGE: 35 years.

LOCATION: lieu-dit La Perrière. A sunny plateau swept by gentle winds that ventilate the grapes and ensure optimal ripeness.

EXPOSURE: NA.

TERROIR : soil dating from the OXFORDIEN stage, consisting of oolitic limestone about fifteen metres thick.

Viticulture & Vinification

HARVEST: manual.

YIELD: NA.

SORTING: at the winery.

VINIFICATION: pressing of the grapes and fermentation using indigenous yeasts in lined vats.

AGEING: 10 months in oak barrels (including 10% new oak) followed by an additional 4 months of ageing in vats.

BOTTLING: unfined and unfiltered.

CORK: natural cork
