GEOLOGY: grey and blue marls from the LIAS (Lower Jurassic) with a leafy (laminated) structure, where Savagnin expresses its full potential.

Viticulture & Winemaking

SORTING: in the vineyard and at the winery.

WINEMAKING: the grapes are pressed at 1.5 bar, followed by settling (débourbage) for 1 day before alcoholic and malolactic fermentations.

" This is a beautiful Vin Jaune—fresh, elegant, and very easy to drink. Dominated by a spicy structure, it features the typical aromas of oxidative aging: elegant notes of St. George's mushroom (mousseron), curry, raisins, and dried citrus, with a hint of walnut and peat. The palate is mouth-watering with a slightly saline finish. What a wonderful surprise! "
