GEOLOGY: the soil of the plots consists of red marl: more specifically, Keuper variegated marls dating from the TRIASSIC period; this term reflects the variety of colors in the different marly layers, ranging from violet/red to light green and white. The color indicates the level of oxidation of the iron within the marls: when they are red, the iron is highly oxidized.
HARVEST: the three grape varieties are harvested together by hand.
YIELD: 27 hl/ha.
SORTING: in the vineyard and at the winery.
WINEMAKING: the grapes from the 3 varieties ferment together in stainless steel tanks for 12 to 15 days, with pump-overs twice a day. Alcoholic fermentation with indigenous yeasts + malolactic fermentation.

"I recommend decanting it a few hours before opening: you will then be charmed by its elegant notes of blackcurrant and clove, enhanced by a hint of morello cherry and peony. Its low alcohol content (11.5%) in no way hints at its full and fleshy texture: it is a very promising wine for aging, perfectly balanced!"
