SOILS: White chalk soil dating from the CAMPANIAN (Upper Cretaceous geological period), with some silty and stony outcrops resulting from the erosion of surrounding peaks. Made of very pure limestone, this chalk is highly porous and thus has a very high water retention capacity. However, it can cause chlorosis in the vines, which is managed by choosing an adapted rootstock.
HARVEST: hand-picked.

SORTING: in the vineyard and in the cellar.
WINEMAKING: slow pressing. Only the 'cuvée' (first press juice) is used. No malolactic fermentation. Aging on fine lees for 7 months in stainless steel tanks before bottling.
