PLANTING DATE: N/A
LOCATION: The grapes from the 2015 harvest (50% of the blend) come from the single plot named Vaucherots. This parcel is strictly reserved for the estate's prestige and long-cellaring cuvées. Renowned for its low yields, it allows the grapes to maintain a remarkable acidity and a very low pH, bringing immense finesse and saline tension to the wines.
EXPOSURE: East-facing. This allows the vines to catch the very first morning sunrays without excessive heat, ensuring an even ripening of the Chardonnay.
SOIL: Hard and pure chalk from the CAMPANIAN stage (Upper Cretaceous).
HARVEST: Manual.
YIELD: N/A
SORTING: In the vineyard and at the winery.
WINEMAKING: Only the cuvée juice (extracted from the first three pressings) is used for the 2015 harvest grapes. Fermentations (using indigenous yeasts, pied de cuve, or neutral active dry yeasts depending on requirements) are carried out in 225-liter Bordeaux barrels. Malolactic fermentation is blocked. Aged on fine lees for 10 months in 225-liter oak casks.
BOTTLED (TIRAGE): July 2016.
AGING ON LATHS: 44 months.
DOSAGE: 4 g/l (house liqueur crafted from reserve wines and/or wines of the current vintage).
CORK: Natural cork.
"A truly beautiful Champagne, distinguished and refined, boasting elegant aromas of almond, white peach, and lime. The palate is vibrant and deeply flavorful, leading into a gorgeous saline finish—the true hallmark of its terroir. Perfect!"
