WINEMAKING: Destemming of grapes. Maceration in tanks for 24 to 48 hours. The decision to devat is made upon tasting, similar to how winemakers do for their Rosé des Riceys. Only free-run juice is used; after settling, then yeast inoculation with neutral yeasts, alcoholic and malolactic fermentations take place. Racking with cold tartaric stabilization.
