LOCATION: Lieu-dit Les Combes. Located right on the border of the Meursault commune, it sits at the bottom of the slope, in an area where the terrain flattens slightly at the mouth of a small valley (a "combe", hence its name). Although it is a "Village" appellation, the proximity to Meursault gives the wine a certain fullness on the palate that is not necessarily found in wines from the more northern sectors of Volnay.
EXPOSURE: East/South-East. The vines capture the first rays of the sun at dawn and benefit from a more progressive warmth in the afternoon. This favors a slow ripening of the berries, guaranteeing the freshness and acidity essential to the elegance of a Volnay.
TERROIR : Its position at the foot of the slope provides a deep soil rich in marl and marly limestone, composed of limestone scree mixed with red clays. The presence of gravel ensures sufficient drainage for the Pinot Noir, producing Volnays renowned for their roundness and accessibility in their youth.

WINEMAKING: Maceration for 12 to 15 days in temperature-controlled vats. Extraction is kept gentle, as Domaine Maillard seeks to preserve the natural delicacy of the "Combes" soils. Both alcoholic and malolactic fermentations are completed. A short static settling (débourbage) in vats is performed before aging begins.
AGING: 18 months in 228-liter barrels, with 25% new oak.
BOTTLING: No fining. Bottled after light filtration.
