GEOLOGY: soil composed of reddish-brown clay-silty colluvium, where limestone debris abounds, blanketing the JURASSIC substrate. These fragments, resulting from natural erosion and frost action, have moved down the slope to enrich this terroir. This deep and generous land, renowned for producing heady red wines, has gradually been replanted with Chardonnay, where the white wines are more powerful than average with a floral dominance. Sylvain MOREY refines his knowledge of this terroir vintage after vintage: by combining harvest dates, barrel origins, and aging length, the wines gain in finesse and delicacy; they stand out for their length, strength, and creaminess.
HARVEST: Manual.
YIELD: 55 hl/ha.
SORTING: In the vineyard and at the winery.

AGING: 18 months on fine lees in 350-liter barrels (20% new oak). No lees stirring (bâtonnage).
BOTTLING: February 2025, after casein fining. Unfiltered.

" Les Champs-Gains produce white wines that are rich and somewhat powerful. Those from Sylvain MOREY present an almost mineral freshness, with a floral dominance and discrete almond notes brought by the aging on lees. It is a spellbinding wine due to its roundness, its delicacy, and its slightly creamy flavors. "
