Terroir

VINE AGE: 50 years old.

LOCATION: A blend of plots located in the commune of Chorey-lès-Beaune, in the plain areas at the foot of the slope.

EXPOSURE: East / South-East.

TERROIR : Silty soils with gravel resting on a Jurassic limestone substrate. These lands are light and well-drained; the presence of gravel promotes soil warming, while the silt provides the necessary finesse for the wine's balance.

Viticulture & Winemaking

HARVEST: Manual.

YIELD: N/A.

SORTING: In the vineyard.

WINEMAKING: Gentle, low-pressure pressing of the bunches. After a few hours of static settling (débourbage) in vats, the must is transferred into 228-liter barrels for alcoholic and malolactic fermentations, as well as aging.

AGING: 10 months in 228-liter barrels.

BOTTLING: After fining and filtration.

CLOSURE: Natural cork.

Sommelier's Note

"This Bourgogne Aligoté offers a rather floral and delicate profile, with slightly creamy notes. Endowed with beautiful energy, it seduces with its freshness and finesse. The wines of this appellation produced by Domaine Maillard are capable of aging for a good ten years, developing aromas of honey and candied fruit"
