LOCATION: Lieu-dit La Chanière. Located at the mouth of the Pommard "combe" (valley), it is one of the highest climats in the appellation (between 300 and 330 meters in altitude). The Domaine Maillard plot is situated on a steep slope, ensuring excellent natural drainage.
EXPOSURE: South/South-East. The plot thus benefits from optimal sunshine, which compensates for the natural coolness associated with the altitude.
TERROIR : Marly soil with rendzinas containing 30% gravel (cailloutis). It produces balanced and rather well-structured wines (often described as "masculine").
HARVEST: Manual.
YIELD: N/A.
SORTING: In the vineyard.
WINEMAKING: The harvest is placed in temperature-controlled vats for a maceration period of 12 to 15 days. Extraction is carried out through one or two daily punch-downs (pigeages). Once the alcoholic and malolactic fermentations are complete, the wine is clarified by static settling (débourbage) in vats before beginning its aging phase.
AGING: 18 months in 228-liter barrels, with 50% new oak.
BOTTLING: No fining. Bottled after light filtration.
CLOSURE: Natural cork.
