LOCATION: Lieu-dit Les Renardes. Although this "climat" is historically and mostly famous for its powerful red wines, Domaine Maillard owns a small 34-are plot planted with Chardonnay. Regulations do not allow the lieu-dit to be mentioned on the label for white Corton wines.

TERROIR : This terroir, which also produces red Cortons, consists of brown limestone soils relatively rich in clay, dating from the MIDDLE OXFORDIAN (Upper Jurassic). it gives the white wine a remarkable structure and mineral complexity.

WINEMAKING: The grapes are pressed using low-pressure pneumatic pressing. The extracted juice is transferred to vats for settling (débourbage) and then into barrels for alcoholic and malolactic fermentations.
AGING: 12 to 18 months in 228-liter "pièces" (including a portion of new oak barrels), with bâtonnage (lees stirring).
BOTTLING: After fining and filtration.
CLOSURE: Natural cork.
