GEOLOGY: The Les Charmois "climat" is located on a highly faulted geological zone that offers alternating marly and limestone soils dating from the BATHONIAN (Middle Jurassic); three types of outcropping soils can be distinguished: oolitic limestones (LOWER BATHONIAN), marls with Pholadomya bellona (bivalve mollusk fossils present in the MIDDLE BATHONIAN), and massive dolomitic limestones (UPPER BATHONIAN). These shallow and very stony soils yield rich and early harvests.
HARVEST: Manual.
YIELD: 54 hl/ha.
SORTING: In the vineyard and at the winery.
WINEMAKING: Whole-cluster pressing. Alcoholic fermentation with indigenous yeasts in 350-liter barrels. Full malolactic fermentation.
AGING: 18 months on fine lees in 350-liter barrels (20% new oak). No lees stirring (bâtonnage).
BOTTLING: February 2024, after casein fining. Unfiltered.
