TERROIR : The terroir dates back to the EDIACARAN period and consists of Canaveilles schists (more or less metamorphic), along with feldspathic sandstone and black schists (Cabrils formation). Outcropping at the surface, this schistose bedrock forces the vines to take deep root to access vital water resources, essential in summer.
HARVEST: Manual and early, around late August.
YIELD: 35 hl/ha.
SORTING: In the vineyard and at the winery.
WINEMAKING: Direct pressing. A portion of the juice (about 70%) flows into temperature-controlled stainless steel vats where alcoholic and malolactic fermentations take place at low temperatures, while the remaining 30% ferments in oak barrels. Regular lees stirring (bâtonnage) is performed to resuspend the lees and add richness to the wine.
AGING: Aged for a few months in stainless steel vats or oak barrels.
BOTTLING: Blending followed by light filtration before bottling.
CLOSURE: Natural cork.
