SORTING: In the vineyard and at the winery.
WINEMAKING: Upon arrival at the winery, the grapes undergo rigorous sorting and pre-fermentation cooling. After destemming, the harvest is placed in temperature-controlled vats for a prolonged 5-week maceration. Constant thermal control allows for a delicate extraction of the tannic structure and aromatic precursors. The process concludes with the full completion of both alcoholic and malolactic fermentations.
AGING: Intentionally short. A few months in stainless steel vats.
BOTTLING: After light filtration. No fining.
