GEOLOGY : Paleozoic bedrock from the CAMBRIAN period, among the oldest in Europe. A hybrid composition of Canaveilles schists, Cabrils black schists, and feldspathic sandstone. The outcropping rock induces deep rooting, ensuring optimal resilience to water stress; terraced vineyard, 100% manual cultivation.
HARVEST: Manual, between late August and mid-September (starting with Grenache, followed by Mourvèdre and Carignan).
YIELD: 35 to 40 hl/ha.
SORTING: In the vineyard and at the winery.
WINEMAKING: Upon arrival at the winery, grapes are sorted and cooled before being destemmed and placed in temperature-controlled vats. They macerate for 5 weeks for a gentle extraction of aromas and tannins. Both alcoholic and malolactic fermentations completed.
AGING: Intentionally short. A few months in stainless steel vats.
BOTTLING: After light filtration. No fining.
CLOSURE: Natural cork.
