GEOLOGY : This exceptional terroir ranks among the oldest in Europe. The geological formation of the PUIG AMBEILLE plot dates back to the CAMBRIAN period and consists of a mosaic of schists (Canaveilles and Cabrils) and sandstone. This outcropping rocky configuration imposes moderate water stress, forcing the root system to explore deep into the soil. Due to its terraced layout, the vineyard is worked exclusively by hand.

Viticulture & Winemaking

HARVEST: Manual, between late August and mid-September (starting with Grenache, followed by Mourvèdre and Carignan).

YIELD: 35 hl/ha.

SORTING: In the vineyard and at the winery.

WINEMAKING: Full destemming. 6-week maceration in stainless steel with gentle extraction (few pump-overs). Both alcoholic and malolactic fermentations completed.

AGING: 18 months in stainless steel vats.

BOTTLING: After light filtration. No fining.

CLOSURE: Natural cork.

It offers an exceptional concentration of black fruits, wrapped in warm notes of cocoa with a hint of cinnamon. The mouthfeel is silky, leading into a luscious long finish of blackberry. A truly savory cuvée!"
