Terroir

PLANTING DATE: 1987.

LOCATION: vines planted at an altitude of 300 m, on the Clos Béru plot, situated around the château and enclosed by a 12th-century wall.

EXPOSURE: South (2/3 of the plots) / South-West (remaining 1/3).

TERROIR : clay-limestone soil dating back to the MIDDLE AND UPPER KIMMERIDGIAN, consisting of alternating limestone beds rich in Exogyra Virgula (small fossilized oysters) and gray marls. Depending on the slope, marly veins occasionally surface, replaced a few meters away by predominantly limestone outcrops. This soil variation within the plot itself yields highly complex and richly textured wines.

Viticulture & Winemaking

HARVESTING: Manual.

YIELD: 35 to 45 hl/ha.

SORTING: In the vineyard and at the cellar.

WINEMAKING:

  • Gentle extraction: the fruit is pressed using a long and delicate pneumatic cycle, ensuring the integrity of the berries is respected.

  • Exclusive use of oak: the must is transferred into oak barrels for fermentation, benefiting from the noble contact with the wood.

  • A living approach: faithful to her non-interventionist philosophy, Athénaïs de Béru works with indigenous yeasts, naturally present on the grapes' bloom and in the cellar. No sulfites are added during the harvest, pressing, or fermentation.

MATURATION: 24 months on fine lees in oak barrels.

BOTTLING: Unfined and unfiltered. A light addition of sulfites only if necessary, depending on the vintage.

CORK: Natural cork.

Sommelier's Note

"CLOS BÉRU MONOPOLE is the estate's top-tier cuvée; a masterful wine. It is THE signature cuvée of Château de Béru—complex and mouth-watering, combining aromatic richness (green apple, candied citrus, creamy notes) with a smooth yet vibrant and indulgent palate. A truly great gastronomic Chablis!"
