Terroir

VINE PLANTING DATE: 1980 / 1990.

LOCATION: plots located on a plateau at an altitude of 400 m, in the lieu-dit Les Serres or Dessus de Serres, straddling the municipalities of Chichey, Fleys, and Béru. However, on old cadastral maps drawn up before the phylloxera crisis, this very same lieu-dit bore the name Montserre: the cuvée therefore carries its original name.

ORIENTATION: South (2/3 of the plots) / South-West (remaining 1/3).

TERROIR: Barrois limestone soil from the PORTLANDIAN era, composed of an upper layer of so-called 'sublithographic' limestone, meaning its clay content is only around 5 to 6%. This relatively hard limestone layer covers a second, lower layer of vertically fractured limestone separated by beds of white marl.
To survive in this hard and poor soil, the vines must plunge their roots deep into the crevices of the rock to find the essential nutrients required for their sustenance.

Viticulture & Vinification

HARVEST: manual.

SORTING: in the vineyard and at the winery.

VINIFICATION:

  • Pressing: immediate, pneumatic, using a long and gentle cycle.

  • Clarification: cold static settling in vats.

  • Fermentation: in Burgundian barrels. 100% natural process (no additives) carried out by indigenous yeasts.

AGING: 12 months in Burgundian barrels, followed by an additional 6 months of aging on fine lees.

BOTTLING: unfined and unfiltered. Light sulfiting if necessary, depending on the vintage.

CORK: natural cork

"MONTSERRE is the expression of a very specific soil type (hard Barrois limestone) located at a high altitude, featuring a cold microclimate that gives birth to a pure and crystalline wine. Its aromas of lime and anise, wrapped in a hint of cream, are extremely invigorating, and its thirst-quenching, lemony finish is truly delightful. It is an elegant Chablis of great finesse."
