Terroir

PLANTING DATE: N/A.

LOCATION: The BANYULS RESERVA is a red Vin Doux Naturel made from a blend of red and white grape varieties co-planted on the same plot. Its winemaking is identical to that of the BANYULS RIMAGE, but its aging is very long and oxidative. This cuvée reflects the region's winemaking tradition and bears witness to a time when this wine replaced sugar at the end of a meal, providing a providential source of energy for the workers of the era.

TERROIR : The cradle of the BANYULS RESERVA cuvée dates back to the CAMBRIAN period. This terroir marks a clear sedimentary transition compared to that of Collioure: traces of volcanism fade here, giving way to the emergence of pelites, rocks born from marine or lacustrine sediments. Known as the Jujols series, this formation is characterized by a more moderate metamorphism than the Canaveilles series, the pillar of the Collioure terroir.

Viticulture & Winemaking

HARVEST: Manual, using slightly overripe grapes.

YIELD: 35 to 40 hl/ha.

SORTING: In the vineyard and at the winery.

WINEMAKING: Destemming of the berries, followed by the onset of alcoholic fermentation in stainless steel vats for a few days before intentionally interrupting it by fortification (mutage - addition of neutral grape spirit, minimum 96% ABV). The fermenting yeasts are killed, and the must retains a small portion of the fruit's natural sugars. Maceration continues for a while after fortification, as the alcohol promotes the extraction of aromas.

AGING: One year of aging in glass demi-johns exposed to the winds.

BOTTLING: 30% of the must is blended with another must that has undergone oxidative aging for several years in oak barrels before being bottled.

CLOSURE: Natural cork.

"This cuvée is a rarity. Its oxidative aging in glass demi-johns imparts powerful notes of cocoa and roasted coffee, raisins, and candied fruits. It is extremely luscious and savory, and I find it particularly well-suited for vegan meals. It is a warm wine, full of energy!"
