LOCATION: The BANYULS RIMAGE MISE TARDIVE is a red Vin Doux Naturel made from Grenache Noir with a very small amount of Carignan. "RIMAGE" means "wine of the year" in Catalan, but the term "MISE TARDIVE" (late bottling) indicates a longer aging period than a standard BANYULS RIMAGE: a few months in vats for the RIMAGE, compared to a few years in large oak casks (foudres) for the MISE TARDIVE.

TERROIR : The terroir where the BANYULS RIMAGE MISE TARDIVE vines are planted dates back to the CAMBRIAN period. Compared to the Collioure terroir, it marks a shift in sedimentation conditions, with the disappearance of the volcanic component and the appearance of pelites—sedimentary rocks that evolved in a lacustrine or marine environment. Known as the Jujols series, they exhibit a lower degree of metamorphism than the Canaveilles series (Collioure's terroir).

Viticulture & Winemaking

HARVEST: Manual, using slightly overripe grapes.

YIELD: 35 to 40 hl/ha.

SORTING: In the vineyard and at the winery.

WINEMAKING: Full destemming, followed by vatting to initiate alcoholic fermentation. This is intentionally stopped by adding neutral grape spirit (at least 96% ABV), within a limit—evaluated in pure alcohol—of 5% minimum and 10% maximum of the must volume. This process (mutage) kills the fermenting yeast and preserves the grapes' natural sugars. Maceration continues after fortification, as the presence of alcohol allows for a gentle extraction of aromas. The must is then racked into foudres.

AGING: 15 months in foudres to add complexity to the fruity aromas and soften the tannins.

BOTTLING: N/A.
