WINEMAKING: Upon arrival at the winery, grapes are cooled before undergoing direct pressing. The resulting must is transferred to stainless steel vats for the start of alcoholic fermentation. After a few days, fermentation is stopped by fortification (mutage - addition of 96% vol. neutral spirit), neutralizing the yeast to preserve the natural sugars.
AGING: After racking, short aging in vats.
