GEOLOGY :

  • Ancient Foundations: The vineyard is rooted in one of Europe’s oldest primary formations, dating back to the CAMBRIAN period.

  • Sedimentary Shift: Unlike the neighboring Collioure, this site marks a geological transition where volcanic elements fade, leaving room for pelites—sedimentary rocks born from a distant marine and lacustrine past.

Viticulture & Winemaking

HARVEST: Hand-picked at optimal ripeness through successive selective passes (tries).

YIELD: 30 hl/ha.

SORTING: Meticulous berry selection both in the vineyard and at the cellar.

WINEMAKING: After a pre-fermentation chill, the grapes undergo direct pressing. Fermentation begins in stainless steel before being intentionally halted by fortification (mutage) with 96% neutral wine spirit. This process preserves the fruit's natural sugars while the post-fortification maceration ensures a delicate extraction of complex aromas.

AGING: Racked and briefly aged in stainless steel vats.

BOTTLING: Performed after light clarification.

CLOSURE: Natural cork.
