SITUATION: Predominantly crafted from Grenache Noir with a touch of Carignan, the BANYULS RIMAGE MISE TARDIVE is a testament to the art of patience. While "Rimage" is Catalan for "vintage wine," the "Mise Tardive" (Late Bottling) designation indicates a distinct evolution. Unlike classic Rimage wines bottled young, this cuvée is aged for several years in large oak casks (foudres), imparting incomparable depth and a refined structure.

GEOLOGY : Rooted in a CAMBRIAN primary base, this terroir marks a significant sedimentary shift from Collioure. Here, volcanic components fade to make way for pelites—sedimentary rocks born from ancient marine and lacustrine environments. This Jujols series, less metamorphic than that of Collioure, grants the wine a signature of mineral finesse.

Viticulture & Winemaking

HARVEST: Hand-picked, using grapes at optimal ripeness (slight over-ripeness).

YIELD: 35 to 40 hl/ha.

SORTING: Rigorous selection in the vineyard and upon arrival at the winery.

WINEMAKING: After total destemming, fermentation begins in vats before being halted by the ancestral "mutage" (fortification) on the skins. By adding neutral wine spirit (96% vol.), one preserves the fruit's natural sweetness. A prolonged post-fortification maceration allows for a gentle extraction of complex aromas and silky tannins. The wine is then racked into oak casks.

AGING: 15 months in large oak casks (foudres) to enhance aromatic complexity and soften the structure.
