PLANTING DATE: N/A.

LOCATION: The BANYULS RIMAGE is a red Vin Doux Naturel made from Grenache Noir with a very small amount of Carignan. "RIMAGE" means "wine of the year" in Catalan.

EXPOSURE: N/A.

TERROIR : The terroir dedicated to the BANYULS RIMAGE cuvée originates in the CAMBRIAN period. It differs from that of Collioure by a major shift in sedimentation conditions: the disappearance of volcanic elements in favor of the appearance of pelites. These sedimentary rocks, originating from ancient lacustrine or marine environments, make up the Jujols series. The latter exhibits more moderate metamorphism than the Canaveilles series, characteristic of the Collioure terroir.

Viticulture & Winemaking

HARVEST: Manual, using slightly overripe grapes.

YIELD: 35 to 40 hl/ha.

SORTING: In the vineyard and at the winery.

WINEMAKING: After full destemming, the harvest is vatted, and alcoholic fermentation is interrupted by fortification (mutage). This operation consists of adding neutral grape spirit (minimum 96% ABV) in a proportion of 5% to 10% of the must volume. This process neutralizes the yeasts while preserving the fruit's natural sugars. Maceration continues after fortification, as the presence of alcohol promotes a delicate aromatic extraction.

AGING: Short aging in vats in a reductive (non-oxidative) environment so the wine retains its fresh and youthful fruit aromas.

BOTTLING: After racking. An additional 3 months of bottle aging before release.

CLOSURE: Natural cork.
