Terroir

AGE OF VINES: 30-40 years.

LOCATION: a blend of plots distributed over the highest areas of the Malaucène and Le Barroux municipalities, between 350 and 450 metres.

EXPOSURE: Due Nord / North-West. A strategic choice to ensure the vines escape the scorching afternoon sun. Ripening takes place in the mountain's shade, guaranteeing a low-pH wine with beautiful natural acidity.

TERROIR : a mix of OLIGOCENE limestone and marls with older black slaty marls dating back to the TRIASSIC period. This provides limestone for the minerality—giving the wine a crystalline feel—and clays that bring volume and weight to the palate.

Viticulture & Winemaking

HARVEST: manual.

YIELD: 15 hl/ha.

SORTING: in the vineyard and at the cellar.

WINEMAKING: gentle pneumatic pressing of the grapes. Cold settling (débourbage) for 24 to 48 hours. Low-temperature fermentation in stainless steel vats.

AGEING: 18 months on fine lees in stainless steel vats.

BOTTLING: after light filtration.

CORK: DIAM®10 cork, specifically designed to ensure the absence of any cork taint, using cork flowers previously cleared of the molecules responsible for this aromatic deviation.

Sommelier's Note

"Philippe GIMEL offers us here a vibrant, pure wine, unvarnished by oak or artifice, which challenges the conventions of Southern whites, often perceived as lacking acidity. The carefully chosen exposure of his vines gives the wine a subtle 'crystalline spring water' character with incredible aromatic precision: with its scents of peach, kiwi, white flowers, and fennel, it delivers a silky texture energized by a lovely tension. This wine is magnificent! "
