DESCRIPTION: a radical shift in style, the traditional grape variety of Muscadet, Melon de Bourgogne, undergoes ageing here in terracotta jars (more info on amphora winemaking here). This amphora-aged wine reveals a completely new expression of the variety, bound to delight the palates of all eclectic wine lovers!
CARPE DIEM truly lives up to its name. It reflects Epicurus's philosophy, inviting us to seize the day as it comes and to appreciate the simple pleasures nature provides.
The use of the amphora—a more neutral vessel than a wooden barrel—allows the juice to retain its youthfulness and fruit purity. Furthermore, the wine is vinified without added sulfites, as is often the case with amphora wines.
SOIL: the grapes come from vines planted on poor granite soil—a magmatic rock crystallized by the slow cooling of magma millions of years ago within the Earth's mantle, naturally acidic, rich in silica, and low in trace elements.
This ideal soil for vines produces wines that are generally more complex, requiring patience and cellaring time to fully open up..
HARVEST: manual / hand-picked.
VINIFICATION: gentle pneumatic pressing of the grapes. Vinified with no added sulfites. Fermentation in vats using indigenous yeasts.
AGEING: 15 months in terracotta jars + 1 year in bottle.
BOTTLING: unfined and unfiltered.
CORK: natural cork under a wax capsule.
