VINIFICATION: delicate pneumatic pressing. The must is not settled. Fermentation in vats using indigenous yeasts.
AGEING: 24 months on fine lees (50% in 500-liter Austrian oak barrels from Stockinger and 50% in terracotta jars). Followed by racking and an additional 2 months in vats.
BOTTLING: unfined and unfiltered.
CORK: natural cork under a wax capsule.
